Step 1

Sort the basil, wash thoroughly, and dry. Place the capers and olives in a sieve and let all the liquid drain off. Put the olives, capers, and basil into a blender (mixer) and chop finely. Transfer to a deep bowl, add breadcrumbs and olive oil, and mix well. The mixture of capers and olives is called Tapenade. This sauce is highly popular in Mediterranean countries, particularly in Italy. In the French province of Provence, a small amount of dark rum is added to the sauce.

Make crosswise cuts on the tomatoes, pour boiling water over them, remove the skin, and take out the seeds. Cut the flesh into long strips. Season with salt and pepper to taste.

Clean the fish from scales, gut it, and thoroughly rinse inside and outside. Next, spread sauce on one side. Place the clean side down on a baking sheet previously greased with olive oil. Put tomatoes on top. Bake in a preheated oven at 180°C for 25 minutes.
