
Grilled dorado
Description
In addition to the amazing taste and aroma, we get a golden, crispy crust, while the fish inside remains very tender and delicate. For the marinade, use olive oil with lime juice, adding herbs and coarse salt. The fish cooks very quickly over charcoal, while the marinade needs 30 minutes to 2–3 hours. Serve the fish with grilled vegetables, fresh herbs, mashed potatoes, or celery purée.

Step 1

1. First, thoroughly clean and wash the fish, then pat it dry. In a bowl, mix lime juice, olive oil, and spices. Make shallow cuts along the entire length of the fish, then place it in a container with a lid. Pour the marinade over the fish and add bay leaves (2 on the outside and one inside the cavity). Refrigerate the fish for at least 30 minutes.

2. Take out the marinated fish and transfer it to a grill rack. Sear on both sides for no more than 10-15 minutes until a golden crust forms.

3. Transfer the fish from the grill to a plate and serve with fresh herbs and a light vegetable salad.
