Homemade chicken ham

Description

Perfect for both holidays and everyday meals. To give the ham a pronounced chicken flavor, I add neither starch nor eggs. The ham gets its firmness from gelatin and tight packing. This kind of ham can be sliced into thin pieces and tastes great. Serve with herbs and sauce.

    Prepare the ingredients.

    Remove all the flesh from the chicken. I recommend leaving the skin, as it will make the ham juicier. Cut the flesh into pieces convenient for a meat grinder or blender. Set the fillet aside.

    Pass the chicken meat, excluding the breast fillet, through a meat grinder with a coarse plate twice. Cut the breast fillet by hand into medium-sized cubes. This way, a beautiful “marbled” pattern will appear on the cut.

    Sprinkle the minced meat with gelatin and add spices.

    Mix thoroughly until thin white strands form deep within the minced meat. This is necessary to compact the meat mixture so that the ham does not fall apart into pieces when sliced.

    Cut a piece of roasting bag to the required length and tie one end tightly. Place the minced meat into the bag, arranging it along one long edge.

    Compact the minced meat along the entire length by tapping the bag on the table. Fold the excess width of the sleeve around the future ham. Wrap the second edge and tie it. Tie the ham with string around it in the manner of a sausage. All this will also make slicing the ham easier later on.

    Place the wrapped ham on the steamer rack.

    Steam-cook with the lid closed for half an hour. Then cook for another 15 minutes at the very lowest simmer.

    The finished ham is firm, with a small amount of broth inside, and a pleasant orange hue on the outside.

    Now the ham needs to be cooled and compacted further. You can place the ham under a small weight between two boards. I wrap the hot ham loaf in plastic cling film, tightly twisting the ends and tying them to swaddle it firmly. Send the bundle to the refrigerator until completely cooled.
