In a heavy-bottomed saucepan, combine milk, sugar, baking soda, and vanilla. Bring the milk to a boil over medium heat, being careful not to let it boil over.

When the milk turns creamy in color (after about 20 minutes), reduce the heat to the minimum.

Boil the condensed milk over low heat, stirring constantly, for 1 hour, then remove from the stove.

Stir the condensed milk for 5 minutes. Cool to room temperature, then place in the refrigerator for 1 hour. Homemade dulce de leche thickens further after chilling in the refrigerator. Store the finished milk in a sealed jar.
