
Homemade Boiled Sausage
Description
The recipe won't take much time. None of your family or friends will guess that you made the sausage yourself until you tell them. Tested—it bakes beautifully even on pizza under a layer of cheese, doesn't melt away, and holds its shape. With the sausage you can make tasty open sandwiches, canapés, bruschetta, and sandwiches. Serve it with any side dish. You can serve it warm or chilled.

Prepare the listed ingredients. Peel the beet and use half of the vegetable. Rinse the drumsticks in water.

Place the drumsticks in a kazan or pot and cover with hot water. Place the pot on the stove and bring its contents to a boil. Skim off the foam that forms with a slotted spoon.

Add chicken seasoning, salt, and bay leaves. Simmer the drumsticks for 40–50 minutes until cooked through over medium heat.

Then carefully remove them and let cool slightly so it’s easier to work with the poultry. Remove the skin and discard it; use only the flesh. Pull the flesh from the bones, remove cartilage and bones, break into pieces, and place in the blender bowl.

Grate half the beet on a fine grater into a deep bowl and pour in 100 ml of broth. Soak the gelatin in another 100 ml of broth for 5–10 minutes, then mix it thoroughly again. Squeeze the beet juice and pour it into the liquid with the gelatin.

Peel the garlic cloves and press them onto the chicken in the bowl. Pour the colorful beet juice with gelatin into the same bowl.

Purée the entire mixture with an immersion blender for 4–5 minutes until all pieces of poultry are thoroughly ground. You should end up with a pink mixture. If it is too thick, gradually add broth.

Place it in a narrow container (immersion blender cup) and tap the container against the table several times to release air bubbles. Level the surface of the mixture and refrigerate for about 2–3 hours, or preferably overnight.

After the specified time, the sausage will set firmly. Slide a knife between the sausage and the container and carefully loosen it from the sides of the glass. Turn it over and tap the bottom; the sausage will drop onto a plate or cutting board. Slice the sausage into rounds and serve with bread.
