Homemade Canned Herring

Perfect with meals and drinks. Homemade canned fish is an excellent appetizer and main course that tastes better served with a side. Today I want to suggest you make herring preserves. At first glance it may seem this fish isn’t quite right for it, but that’s not true. When you try this dish for the first time, you’ll fall in love with it right away. The appetizer is ready. Serve immediately.

    1. When I first tried herring prepared like canned fish, I couldn't believe it was made from this fish. In taste, the finished dish is in no way inferior to ready-made canned goods. The only downside is the long cooking time (6 hours). But the fish cooks "by itself," so to speak. The most important thing is to prepare everything properly and braise it under periodic supervision. So, take 2 herring, thaw them, but not completely (so the fish is easier to cut). Wash them thoroughly and gut them.

    2. Cut into pieces of medium thickness (about 1 centimeter). If you like roe or milt, add it on top of the fish. Transfer the cut fish to the pot in which you will stew it.

    3. Peel the onion and carrots and prepare the spices. You can use classic ready-made fish seasonings, or make do with what you have on hand (every cook has bay leaves, allspice, black pepper, and cloves). Chop the onion and carrots and add them to the fish.

    4. Now a very important point: under no circumstances should you stir with a spoon, spatula, or your hands! You need to pour in the vegetables and spices and add a tablespoon of vinegar (spread it evenly over the entire fish). Sprinkle the sugar evenly. Salt to taste, then take hold of the edge of the pot and gently shake it in different directions. This will allow the vegetables and spices to distribute evenly without "bruising" the pieces. Don't worry—during cooking everything will fall into place and the vegetables will spread out as they should.

    5. Cover with water so that it just covers the fish. Bring to a boil, then reduce the heat and simmer for 5 hours. Periodically shake the pot from side to side, but do not stir under any circumstances, or the fish will fall apart.

    6. This preserve goes perfectly with mashed potatoes or rice. In addition, the fish is equally delicious served hot or cold.
