
Homemade Sausage in Foil
Description
Soy sauce was added to the recipe gradually. In my opinion, it makes the sausage juicier. But if you don’t want to add it, replace it with salt to taste. Coriander seeds really enhance the flavor of the sausage—don’t skip them. Follow the recipe and the dish will delight you. It can be served warm or chilled.

Prepare the necessary ingredients.

Wash the meat. Cut it into pieces. Peel the garlic. Grind the meat through a meat grinder with a coarse plate.

Add all the peppers, coriander (add half as whole seeds and grind the other half), soy sauce, and cold water to the prepared mince.

Mix the ground meat thoroughly. Cover the bowl with plastic wrap and refrigerate for 12–18 hours.

When the time is up, take the ground meat out of the refrigerator and mix it well once more. Tear off 2 sheets of foil (approximately 45 × 25 cm each). Divide the ground meat into two portions. Place one portion on a sheet of foil. Shape it into a log. Repeat with the second portion of ground meat.

Wrap tightly in foil. Twist the ends like a candy wrapper and tuck them under. Transfer the future sausage into a mold. Preheat the oven to 180 degrees. Bake for 35 minutes.

After the specified time, remove the sausage from the oven, open the foil (carefully — hot juices may escape!) and return it to the oven for 10 minutes.

Remove the finished sausage from the oven. Transfer it from the mold, leaving the foil in place. Let it cool at room temperature, then refrigerate for 8 hours.

Slice the fully chilled sausage and serve with pickled vegetables.
