
Homemade Sausage in a Skillet
Description
A tasty appetizer for any gathering. For homemade sausage, you can use not only pork mince, but also chicken or beef. You can also add other spices to the mince to taste. The water for the mince must be ice-cold—this helps keep moisture loss during cooking to a minimum. If voids form inside the sausage after it settles, pierce those spots with a needle and carefully squeeze out the air. When boiling the sausage, do not let the water boil vigorously, or the sausage may burst. Serve the appetizer at the table.

Prepare all the necessary ingredients for making homemade sausage in a frying pan.

Wash the pork, pat it dry, and cut it into pieces. Run it through a meat grinder fitted with a coarse plate. Put the ground meat in a bowl and add minced garlic.

Add the cornstarch.

Add salt and black pepper to the ground meat.

Pour in ice-cold water and mix until smooth.

Slide the prepared casing onto the special meat grinder attachment, tie off the other end, and fill it with the minced meat.

Twist the sausage in several places and tie off the second end of the casing. Place in a bowl, cover, and refrigerate for 12 hours to set.

Pour water into a pot and add salt. Bring to a boil, then reduce the heat to the lowest setting. Pierce the sausage all over. Place it in the water and cook for 5 minutes.

Pour vegetable oil into a skillet and heat over low heat. Place the sausage in the pan and fry, covered, for 10–15 minutes on each side.
