
Homemade fruit caramel

The recipe won't take much time. A simple recipe for making homemade fruit caramel using fruits of your choice. Serve chilled.

1. Preheat the oven to 65-75 degrees Celsius. Cut the strawberries or other fruits into small pieces. Place the fruit in a small saucepan, adding water and lemon juice. Cook over medium heat until soft. This cooking method helps the fruits retain their color.

2. Place the fruit pulp into a food processor or blender and blend until smooth. Taste the purée and add more sugar if needed. Keep in mind that as the caramel dries, it will become sweeter due to the natural sugars in the fruit, so don't overdo it. Add a small amount of water if necessary, if the purée is too thick.

3. Line a baking sheet with plastic wrap. The oven temperature is low enough that it won't affect the plastic. Brush the sheet with vegetable oil, then pour the fruit puree onto the sheet, spreading it evenly with a spatula to a thickness of 4–6 mm. Place the sheet in the oven for 6–8 hours. Ensure there is air circulation in the oven to prevent burning. Instead of using an oven, you can place the sheet in direct sunlight for 6–8 hours.

4. After 6-8 hours, carefully remove the fruit mixture from the tray, take off the plastic wrap, replace it with parchment paper, and place the fruit mixture back. Return it to the oven or sun for another 6-8 hours. If it becomes too dry, brush the caramel with a brush moistened with water.

5. Roll the paper into a sheet and cut the caramel into slices of the desired size. Dust with cornstarch to prevent sticking, cover with a plastic lid, and store in a tightly sealed container in a cool place.
