
Homemade Pumpkin Pie
Description
The baking is simple and quick. Ready-made pumpkin purée is often used in recipes. If you don't know how to prepare it properly, use this recipe as a guide. You can store the prepared purée in the refrigerator and use it as needed. You can make the dough by hand, but using a food processor makes it much easier and faster. Serve the finished cake after it has cooled; you can decorate it with chocolate or cream. Serve it warm or chilled. Perfect with tea.

1. Wash the sugar pumpkin, cut each one in half, and remove the seeds.

2. Line a baking sheet with foil and place the pumpkin on it, cut side down. Put it in a preheated oven at 200 degrees and bake for about 1 hour (if the pumpkin is small). Pierce the flesh with a fork: if it's soft, it's done. If necessary, continue baking for another 15–30 minutes.

3. Remove the pumpkin from the oven and let it cool for 1 hour.

4. Using a spoon, remove the flesh from the cooled pumpkin and place it in a bowl.

5. Place the pumpkin flesh into the food processor bowl and puree until smooth.

6. Transfer the finished pumpkin purée into a plastic container.

7. Cut the cold butter into pieces and place it in the food processor bowl, add the flour, 6 tablespoons of sugar, and 1 teaspoon of salt. Mix until a crumbly dough forms.

8. Add sour cream to the dough and mix. Divide the dough into 2 parts and refrigerate for 30 minutes.

9. For the filling: mix 4 cups of pumpkin puree, add eggs, 1.5 cups of sugar, 0.5 teaspoon of salt, condensed milk, and spices.

10. Mix the contents of the bowl thoroughly.

11. Meanwhile, the dough is ready: place each ball and roll it out into a small circle to fit the baking pan.

12. Carefully transfer the dough into the pan, press it firmly against the bottom and sides, and trim off any excess dough.
