
Homemade cottage cheese from 2.5% kefir
Description
Children's cottage cheese can be prepared on the stove in just 15 minutes using kefir. You can add any fruits or berries to taste, as well as jam or toppings of your choice. The yield of cottage cheese depends on the fat content of the kefir. In this recipe, 0.5 liters of 2.5% fat kefir is used, resulting in 150 grams of finished product.

1. To prepare this delicious dessert, we will need plain kefir. The higher the fat content, the more cottage cheese you'll get. Pour the kefir into an enameled pot and place it on the stove. Our next task is to bring it to a boil.

2. Gradually, the cottage cheese will begin to separate and whey will form. Stir occasionally.

3. When the mixture reaches this consistency, you can strain the curds. From 0.5 liters of 2.5% kefir, I obtained 300 ml of whey, and the rest was cottage cheese.

4. If the amount of whey is small, prepare a small jar. Strain it through a sieve (you can use cheesecloth).

5. Pour the contents into a strainer. The whey will drain into the jar, and the curds will remain in the strainer.

6. Now take a small spoon and press the cottage cheese through a sieve into a separate container.

7. Add sugar and a little whey or milk to make the cottage cheese softer. I was preparing it for a child, so I passed it through a sieve (you can use a blender if making a larger quantity).
