
Homemade Cottage Cheese Cream Cheese
Description
It works for holidays and everyday meals alike. Homemade cream cheese is very similar in texture to Philadelphia, but it is less fatty and more curdy—you can feel the cottage cheese granules in it. Serve it for breakfast or as an afternoon snack with toasted bread, croutons, or bruschetta. You can brighten the cheese with lemon juice. It can be served warm or chilled.

Prepare the listed ingredients. Buy sour cream of any fat content; the main thing is that it comes in a package.

Place the sour cream package in the freezer for at least 4–6 hours, or better yet, overnight. During this time it will freeze completely. Then cut open the package and remove the frozen product.

Line a colander with a double layer of cheesecloth or cotton fabric and place the frozen sour cream in it. Leave for 2–3 hours to thaw. As it thaws, whey will drain off — about 120–150 ml — and a thick cream cheese will remain in the colander.

The cream cheese will remain in the colander. Its consistency will be incredibly soft and delicate.

Carefully spoon the cottage cheese mixture into a bowl or ramekin and serve with greens, dips, pâté, or fresh vegetables. Enjoy your meal!
