
Homemade Cheese in the Oven
Description
Cheese is much easier to make than it might seem at first glance. And this recipe will help you see that. If you don't like dill, replace it with parsley or any other herbs of your choice. It's best to use homemade milk, but you must be absolutely sure of its quality. Cheese is perfect for breakfast or as an appetizer. It can be served warm or chilled.

Prepare all the necessary ingredients for making homemade cheese.

Pour the kefir into a bowl, beat in the eggs, add the sugar and salt, and mix until smooth.

Bring the milk to a boil and pour in the kefir mixture, stirring.

Bring to a boil and cook over low heat, stirring, for 2 minutes. The mixture should curdle and form flakes.

Wash the dill, pat it dry, and chop it finely. Remove the pot with the cheese mixture from the heat, add the chopped dill, and stir.

Line a colander with very dense cloth (I use a special bag for making cheese), and pour the liquid through. Hang it up and let the whey drain off.

After that, place a weight on the cheese for 3 hours.

Line a baking pan with parchment paper, add the prepared curd, and press it down firmly. I'm not specifying the pan size because the amount of cheese depends directly on the quality of the milk. But it should be filled with cheese almost to the top.

Brush the top of the cheese with egg yolk.

Place in a hot oven and bake the cheese for 30 minutes at 180°C.
