Prepare the ingredients. Let's begin! Finely chop the dill.

Combine the milk and kefir. Use a pot with a thick bottom if you can; I use one with a double bottom, which makes scorching less likely. Mix the milk and kefir and place on the stove over low heat to warm.

Whisk the eggs with a pinch of salt using a whisk or fork until smooth and uniform. You won't need a mixer.

Add salt, pour the eggs into the warm milk in a thin stream. While stirring, bring the mixture to a boil. Simmer for a couple of minutes.

Do not rush to remove the cheese from the heat; let it cool slightly right in the pot. Then take a colander or fruit strainer, line it with cheesecloth, and drain the cheese from the liquid.

Add hot red pepper (I use coarsely ground), ground black pepper, cumin, and dill to the cheese.

Mix the cheese well with the spices.

Tie the cheesecloth tightly. Place the cheese in the refrigerator under a weight for 5-6 hours.
