
Homemade Cheese from Ryazhenka
Description
This appetizer is quick and easy to make. Homemade cheese from ryazhenka is an excellent creamy cheese. Serve it on a piece of hot toast or use it as a filling for pancakes or as a base for spicy appetizers. Homemade ryazhenka cheese can also be used to make creams and various fillings for cakes and pastries, tiramisu, and other desserts. Serve with herbs and sauce.

1. Heat the ryazhenka in a double boiler or over very low heat, stirring constantly, until it reaches 40–45°C. Let it cool.

2. Now place the cooled ryazhenka in the freezer until completely frozen. You can use a food-grade plastic freezer container for this. When the ryazhenka is fully frozen, remove it from the freezer and carefully chop it with a knife into small pieces.

3. Place the frozen ryazhenka broken into chunks on cotton cloth or in a cotton bag. Tie it in a knot and hang it, with a container underneath to collect the whey. After 3–4 hours the ryazhenka will have fully thawed, the whey will drain off, and you will have soft, tender homemade ryazhenka cheese.
