
Homemade Cheese from Milk and Sour Cream

Prepare the ingredients. Wash the dill thoroughly, remove the large stems, and chop finely. Let's begin.

Take a suitable container for mixing and a whisk or mixer. Break the eggs and pour in the sour cream.

Using a whisk or mixer, beat until the mixture is smooth and uniform.

Bring the milk to a boil and add salt.

Pour the egg–sour cream mixture into the milk. Bring to a boil again and simmer over very low heat for 5 minutes.

It will turn out like in the photo, with a cottage-cheese texture.

Remove from the heat the “coagulated” milk. Let it stand and cool for 5–7 minutes. Add dill. Mix.

Let it stand for about 10 minutes.

Transfer the mass onto cheesecloth folded in several layers. Drain the cheese from the liquid.

Tie up the cheesecloth. Hang the cheese for 10–15 minutes so excess moisture drains off. Then place the cheese in a deep dish and put a weight on top. Chill the setup for 4–5 hours.
