
Homemade Cheese from Milk and Kefir
Description
The appetizer is quick and easy to prepare. This cheese contains no unknown additives and is completely safe. You can use it to make a sandwich for morning tea or coffee, or as a filling for pies or zrazy. If desired, you can add your favorite spices or finely chopped herbs during preparation and get a new flavor each time. The appetizer is ready. Serve immediately.

Prepare all the necessary ingredients for cooking. Take the kefir and eggs out in advance so they are at room temperature.

Pour kefir into a bowl, crack in an egg, add salt, and mix until smooth.

Pour the milk into a heavy-bottomed saucepan and bring to a boil over medium heat. While stirring the milk, pour in the kefir mixture in a thin stream. Stir until smooth.

While stirring, bring everything to a boil and cook for 1 minute. Remove from heat and let stand for 10 minutes.

Line a sieve, or a cheese basket as I use, with cheesecloth folded into four layers. Pour the curd mass onto the cheesecloth and let the whey drain for one hour.

Transfer the cheese curd into cheese molds lined with cheesecloth, press it down firmly, and cover the top with cheesecloth. Alternatively, you can leave it in a colander, covering the cheese curd with cheesecloth.

Place a suitable weight on top.

Refrigerate the cheese for 12 hours. Remove the finished cheese from the sieve, remove the cheesecloth, and serve sliced.
