1. Pour the kefir into a saucepan and keep it over low heat until the whey separates and the curds form.

2. Strain off the whey (you should get approximately 500 ml) and leave it to ferment for two days. You can eat the curd.

3. Now pour fresh milk into the pot and add the steeped whey. Cook over low heat until the cheese separates. This won't take long.

4. Salt, mix, wrap in cheesecloth, and drain thoroughly under a press for 3-4 hours. When the excess water has drained off, the cheese is ready!
