
Homemade cheese
Description
A tasty appetizer for any gathering. Use plain natural yogurt with no additives—not drinkable yogurt. Choose sour cream with a high fat content; that way the final product will taste better and have a denser consistency. A delicate, simple, and completely natural cheese made from the most accessible ingredients you can always find on hand. This cheese is suitable for making desserts, rolls, all kinds of appetizers, and many other interesting dishes. Keep it in your repertoire.

Prepare all ingredients according to the list.

In a deep bowl, combine the sour cream and yogurt.

Mix.

And lemon juice.

Mix everything again.

Place a colander in a deep pot and line it with cheesecloth folded in several layers. I have a special cheese mold.

Pour the sour cream-yogurt mixture into a colander.

Gather the ends of the cheesecloth to the center.

Cover with a plate and place a weight on top (I use a homemade one). Refrigerate the entire setup overnight as is.

In the morning, Philadelphia cheese is ready.

The pot will be left with settled whey, while the cream cheese will gather into a dense lump in the cheesecloth. The whey can be used to make pancakes or fritters.
