Description
Perfect with meals and drinks. There are many varieties of this cheese: its flavor can be mild with a soft texture, or, conversely, the cheese can be hard with a pronounced salty taste. It can be served as an appetizer or used to prepare other dishes, for example, for baking, for casseroles. The appetizer is ready. Serve immediately.

1. Ideally, you should use Imeretian cheese; however, it can be replaced with mozzarella. Cut the cheese into small slices, about 1.5–2 cm thick.

2. Pour the milk into a large pot, place it over heat, and bring to a boil, then immediately remove from heat.

3. Transfer the prepared cheese pieces into a saucepan with milk and stir thoroughly with a spoon (7-10 minutes).

4. Sprinkle the cheese mold (I use a bowl) with salt and transfer the resulting mixture into it. Fold the edges carefully toward the center, then press down with a spatula; repeat several times.

5. Sprinkle the cheese with salt and let it cool, then cover with a towel or plastic wrap and refrigerate for 2–3 days. Enjoy your delicious homemade cheese.
