Homemade mint syrup

Description

The bright aroma and flavor of mint syrup are unmistakable—it's delightfully added not only to desserts but also to tea, coffee, and lattes. It's the base for a refreshing mojito, perfect for treating yourself on a hot summer day. If you have fresh mint on hand, make this syrup at home, as you'll only need a few ingredients and 15–20 minutes.

    Prepare the listed ingredients.

    Rinse the mint sprigs thoroughly, remove any dark leaves, and place the stems into a saucepan, pot, or non-stick pan. You can use either peppermint or lemon balm, according to your preference. The syrup will have a stronger, more pronounced mint flavor with peppermint, and a milder taste with a slight lemon aroma when using lemon balm.

    Pour warm water into the container. To make a thick syrup, reduce the amount to 100 ml.

    Place the container on the stove and bring to a boil, then add citric acid and simmer the syrup over the lowest heat for about 3-4 minutes, until the mint has imparted its flavor and color. Be sure to add the acid, as industrial sugar may re-crystallize directly in the container when heated—the acid prevents this!

    Strain the finished syrup through a fine-mesh sieve and discard the residue.

    Pour the syrup into a sauce boat or jar, serve with dessert tea or coffee, if desired it can be stored in the refrigerator for up to a month.
