
Homemade rice pudding with raisins
Description
Rice pudding can be varied with fruits, berries, and dried fruits, but its taste remains unchanged. Rice pudding is not the same as plain rice porridge, so don't be in a hurry to deny yourself this dessert. It is especially often served for breakfast: it's filling and nutritious.

Step 1

1. Place the rice in a saucepan, pour in the milk, add a pinch of salt, and set over heat. Once boiling, reduce the heat and simmer over low heat for 20-25 minutes, stirring regularly. In a separate bowl, mix the egg and brown sugar.

2. Gradually add half of the rice porridge in portions to the egg mixture with sugar, vigorously whisking all the while.

3. Return the egg mixture to the saucepan with the remaining rice porridge, cook over low heat for 5–10 minutes until thickened, stirring constantly. Add vanilla and cinnamon. Remove the pan from the heat, add raisins, and mix well.
