
Homemade processed cheese
Description
Perfect with meals and drinks. Another plus of making homemade processed cheese is that you can always make it to your taste: add the right amount of salt, your favorite spices, and mix-ins. This time I added only dill to the processed cheese, but most often I add pieces of mushrooms, vegetables, and sometimes even small pieces of hot pepper. Processed cheese is very easy to make—the main thing is to buy good-quality cottage cheese. It can be served warm or chilled.

Prepare all necessary ingredients.

Melt the butter in a double boiler or in the microwave. When the butter has cooled slightly, add the egg and mix well.

Now add the cottage cheese and mix well.

Stir the mixture thoroughly with a spoon to break up the grains as much as possible.

To make the cottage cheese mixture even smoother, you can puree everything with an immersion blender.

In a large pot, bring water to a boil, place a pot with the curd cheese mixture on top and, stirring continuously, melt the cheese until it becomes completely smooth and slightly stretchy.

Now remove the pot with the cheese from the water bath and add salt, baking soda, and dried dill. Mix.
