
Homemade lemon kvass
Description
The taste of lemon kvass is perfectly balanced—it's sweet, yet slightly tart and pleasantly fizzy. Be sure to chill it in the refrigerator before serving. The drink's shelf life is 3 days when refrigerated, but keep in mind that it will become more sour each day. Serve chilled.

Prepare the listed ingredients. Scald the lemons with boiling water to remove bitterness from the citrus.

Grate the zest from the lemons and squeeze the juice from them.

Add sugar and dry yeast to a jar or pitcher. You can use fresh yeast, about 10-15 grams.

Place the lemon zest and pour in the juice. Add warm filtered or boiled water, no hotter than 25–30 degrees. Gently stir.

Cover with a clean cloth and leave at room temperature for 2 hours. During this time, the yeast will become active.

Strain the finished kvass through a fine sieve or a double layer of cheesecloth. Then pour the beverage into a bottle and refrigerate for at least 1 hour.
