Description
The recipe won't take much time. Choose ripe and juicy lemons with yellow peel, not greenish ones—they will fully reveal the drink's aroma and flavor. Be sure to scald the peel with boiling water to remove bitterness, otherwise it will transfer to the limoncello. It's better to remove the peel on the 2nd or 3rd day, continuing to infuse the drink without it. Use high-quality alcohol to prevent the limoncello from absorbing a bitter taste. Ready to serve.

Prepare the listed ingredients. Buy fragrant lemons and high-quality vodka or diluted moonshine (to 40 degrees). You can additionally use a little vanilla sugar.

Place the lemons in a deep container, boil water in a kettle, and pour the boiling water over the fruits so that it steams them from all sides. This removes the bitterness from the lemon peel. Alternatively, you can freeze the lemons and then thaw them without using boiling water, as freezing also effectively removes bitterness.

Cut the lemons into quarters and remove the seeds, trim off the white centers and slice them.

Place the sliced ingredients into the bowl of a grinder or food processor. You can also use a meat grinder fitted with a fine grinding plate.

Process the entire lemon slice into almost a puree using the pulse mode; this will take about 4-5 minutes.

Place the purée into a bowl or ramekin and mix with sugar until completely dissolved.

Pour in high-quality vodka and close with a lid. Shake several times to mix the vodka with the chopped lemons. Place the container in a dark, cool place for at least 2-3 days. Remember to shake the limoncello every day.

After the specified time, the drink will become richer in taste, color, and aroma. Strain it through a sieve, placing a cotton pad on top of the sieve. Now the drink is ready for tasting. If you wish to achieve a more refined flavor, store it for at least another week in a dark, cool place.
