
Homemade Lavash from Whole‑Grain Flour
Description
Tasty baked goods for the whole family. It’s not necessary to buy lavash in a store, because you can easily make it yourself in just 10–15 minutes, but remember that the dough needs about 25–30 minutes for the gluten to activate. The best option is to prepare the dough in advance and fry the lavash right before serving. Serve warm or chilled. Perfect with tea.

Prepare the listed ingredients.

Add whole‑grain flour to a deep container, and add the salt there as well. If desired, at this point you can add other ground spices: thyme, rosemary, etc.

Add vegetable oil: olive, sunflower, corn, but without any odor.

Pour in warm water and start kneading the dough.

After about 5–7 minutes, you can gather it into a firm ball. Cover the dough with plastic wrap and let it rest for 25–30 minutes.

Then divide it into pieces and roll each one out into a thin sheet, dusting the work surface with premium wheat flour.

Heat a wide skillet and reduce the heat to medium. Place the rolled-out sheet onto the skillet and bake for about 1–2 minutes until lightly browned.

Flip it over and bake for the same amount of time. Be careful — you won’t get a golden brown like on a premium wheat‑flour lavash; the edges burn immediately, so keep an eye on the baking.

Place the ready lavash on a plate, immediately spray it with water from a sprayer and cover it with a towel, otherwise as they cool they will dry out and become brittle and crunchy.
