
Homemade Beef and Chicken Aspic
Description
A delicious appetizer for any gathering. Beef shank is the lower part of the leg of a beef carcass, containing joints and tendons. Beef aspic is most often made from beef shank because of the large amount of meat and the rich, concentrated broth from it, full of gelling substances. Long slow simmering of the meat over low heat helps the broth set beautifully and hold its shape! And what a superb flavor such aspic has — be sure to try making it using my recipe. The appetizer is ready. Serve immediately.

So, for kholodets you need beef shank—you can use either the lower or upper part—one chicken, and spices. Wash all the meat and let’s get started.

Place all the meat in a pot, cover with cold water, and bring to a boil. Cook the meat for a few minutes, or a little longer if needed.

Now drain off all the water completely, wash the pot and the meat.

Pour the meat again with clean filtered water and bring to a boil. Reduce the heat as low as possible and simmer the meat covered for 5 hours. Be sure to skim off the foam and excess fat—then the aspic will be clear.

One hour before the end of cooking, add the onion, carrots, spices, and salt.

Remove the spices from the broth and take out the onion and carrot (the carrot can be used to garnish the aspic).

Place greens and carrots at the bottom of the mold.

Top with pieces of beef and chicken.

Pour in the broth and refrigerate overnight. In the morning, turn the mold out onto a flat plate and it’s ready! To help the aspic release from the mold quickly, hold it over steam for a few seconds.

You can also serve the aspic another way, without turning it out. To do this, place the meat on the bottom of a small plate, and put the herbs and carrots on top.

Pour in clear broth and refrigerate overnight.

My aspic had already set after just 2 hours, thanks to the thin layer of meat. It holds its shape perfectly—I simply turned it out onto a plate and it came away from the mold easily. Happy New Year!!!
