Prepare the necessary ingredients. Soak the gelatin in cold water. Blend the cottage cheese with an immersion blender until smooth.

For the shortcrust base, take shortbread cookies and melt the butter.

Crush the cookies into crumbs, add the butter, and mix until smooth.

Place the removable ring (diameter 18 cm) on a plate. Spread the sand crumble on the bottom and press it down.

Combine the bloomed gelatin with the cream and dissolve it over low heat, without bringing it to a boil. In a bowl, combine the cottage cheese and sour cream and beat with a mixer until smooth. Add powdered sugar and beat. While continuing to beat, pour the gelatin mixture in a thin stream.

Pour the fluffy mixture onto the shortbread base, cover the ring with plastic wrap. Place the cheesecake in the refrigerator for 2 hours. Run a thin knife along the edges of the ring and remove it.
