
Homemade cheesecake
Description
Perfectly pairs with tea and coffee. The key to making a cheesecake is achieving a delicate and smooth cheese or curd filling. To get the ideal consistency, blend the mixture with cream using a blender. Additionally, this recipe requires baking the cheesecake in a water bath—place the pan into boiling water. This ensures the cake stays moist inside and the curd mixture doesn't dry out. This dessert can confidently be served at celebrations and will become a centerpiece of the table. Serve it cooled or slightly warm.

1. First, prepare an 18 cm diameter pan: line the bottom with parchment paper. Then wrap the bottom and sides of the pan with two layers of foil to prevent water from entering the pan later.

2. In a blender, crush the chocolate cookies, mix with melted butter, and press firmly onto the bottom of the pan. Bake in a preheated oven at 170 degrees for 10-15 minutes.

3. Mix the cottage cheese with the cream using a blender. Add eggs, orange juice, sugar, orange zest, and starch. Blend the mixture with a mixer for 1 minute.

4. Place the pan with the base into a larger pan, and fill the larger pan with boiling water up to halfway. Put the cottage cheese mixture into the pan with the base, and bake in a preheated oven at 170 degrees for 1 hour.

5. After baking, leave the cheesecake in the oven for 1 hour, then let it cool and refrigerate for 3-4 hours. To decorate, simmer orange slices in sugar syrup (sugar + water) for 10-15 minutes, then cool.

6. Melt the chocolate in a water bath and draw flowers with it on parchment paper. Let them harden. Decorate the cheesecake with chocolate flowers and orange slices.
