
Homemade cheesecake
Description
Delicious baked treat for the whole family. To make homemade cheesecake, you'll need plenty of cottage cheese or cream cheese. I usually use a cheese like Philadelphia, but rich homemade cottage cheese works great too. New York cheesecake, like many cheesecakes, is made on a cookie crust base. I recommend using shortbread cookies and trying to make the base from them instead of the usual graham crackers. Serve with tea or coffee.

Prepare the ingredients.

For the cheesecake base. Crush the cookies in a blender.

Add melted butter to the biscuit, a pinch of salt, and a quarter cup of sugar. Mix everything together. You should get a greasy crumb mixture.

Using a glass, press the dough into the pan, creating small edges. Bake in a preheated oven at 180°C for 5 minutes.

Meanwhile, prepare the cottage cheese. I used cream cheese because it's smoother. Blend it in a blender, then add the remaining sugar and blend again. Then add the flour and blend once more.

Then add the eggs and yolks one at a time, beating the mixture each time. Take the pan with the biscuit base out of the oven and increase the temperature to 280°C.

Add the zest of two lemons and vanilla essence to the cottage cheese mixture.

Pour the cottage cheese mixture evenly into the mold.

Place in a preheated oven for 9–12 minutes. Watch so the top doesn't burn too much. It should set and turn golden, but not become too brown.

Then reduce the temperature to 90-100°C and cook for 50 minutes. The center of the ready cheesecake should jiggle slightly like a soufflé, but it should not be liquid. Then remove the cheesecake from the oven and let it cool completely.

I recommend chilling the cheesecake in the refrigerator for a couple of hours. But it's also incredibly delicious when warm!

Serve the ready homemade cheesecake with jam or condensed milk.
