Mix all dry ingredients: yeast, flour, salt, sugar.
- 3
Step 3

Mix water, milk, and vegetable oil. Stir the dry ingredients into the liquid. Knead the dough.

Turn the dough out onto the work surface, add softened butter. Knead the dough by hand.
- 5
Step 5

Knead the dough until smooth and elastic.
- 6
Step 6

Cover the dough with a bowl and leave it to ferment for 15 minutes.
- 7
Step 7

After 15 minutes, roll out the dough into a thin sheet. Roll the dough into a log, pressing firmly with each turn.
- 8
Step 8

Fold the side edges of the dough inward.
- 9
Step 9

Pinch the seam.
- 10
Step 10

Place the dough on a baking sheet with the seam facing down. Before baking, brush with a mixture of egg yolk and 1 tablespoon milk. Make slashes. Preheat the oven to 180 degrees and bake for 30 minutes.

Step 11

The loaf turned out fragrant and golden brown, with a crispy crust.

Step 12

I'll show the loaf in cross-section—you can see the even porosity of the crumb; it's a shame you can't convey the aroma of freshly baked bread. A wonderful bake for a weekend breakfast.
