Homemade syrniki with cottage cheese

Description

The recipe won't take much time. Homemade pastries are my specialty, especially those from old traditional recipes. Only my grandmother used to make these juicy pastries; you won't find them in stores. They are incredibly delicious, soft and tender. My family devours them right away, and nothing is left for the next day. I think it will be the same for you. The pastry is ready. Serve it at the table.

    1. Place 3 tablespoons of sour cream (20% fat) into the mixer bowl, add 1 cup of sugar (reserve 1 tablespoon for the filling), and beat for a couple of minutes.

    2. Crack 1 chicken egg at room temperature into the bowl, and also add a pinch of salt.

    3. Add a piece of softened butter to the whipped mixture and beat for a couple of minutes.

    4. Sift the flour (350 grams) directly into the bowl, add the baking soda, and mix.

    5. Sprinkle the table with flour, place the dough on it, knead it with your hands, and work it for several minutes. After kneading, let it rest for a few minutes.

    6. For the filling: separate the egg white from the yolk, beat the white with a pinch of salt until foamy, then add the remaining sugar and continue beating.

    7. Mash the cottage cheese with a fork, add the beaten egg white and mix well. Add sour cream and 1 tablespoon of flour, mix thoroughly.

    8. Divide the dough into 4 parts, roll each part out to a thickness of no more than 5 millimeters, and cut out round shapes using a special mold or an ordinary glass.

    9. The edges of the dough should be slightly thicker, so press down gently with your fingers in the center. Spoon the filling onto one side, then fold the other side over the filling to form a pocket. Transfer the pastries to a baking sheet lined with parchment paper and brush with egg yolk.
