
Homemade pasta
Description
The recipe won't take much time. Some might think it's easier to buy pasta from the store. But homemade egg noodle pasta is way more delicious! You can serve it with any meat or vegetable sauces. I'll share a recipe with tomatoes. Serve hot.

1. There's no need to beat the eggs into a foam; just mix them with a whisk.

2. After that, add both types of flour to the eggs. It's best to knead the dough in a food processor, starting at a low speed. If you're kneading by hand, it will take about 15–20 minutes until the dough becomes elastic and no longer sticks to your hands. Wrap it in plastic wrap and let it rest in the refrigerator for an hour.

3. For the sauce, take hard cheese, tomatoes, garlic, and herbs (parsley or basil).

4. Finely chop half a garlic clove and lightly sauté it in oil in a frying pan. Then add the tomato halves, placing them cut-side down to release their juice. Turn off the heat when the tomatoes become slightly orange.

5. Once the dough has rested in the refrigerator, divide it into 4 parts and knead each part by hand once again. The dough should be elastic.

6. Roll out each piece of dough slightly, then pass it through the pasta roller attachment (using the thickest setting). Fold it in half and pass it through the attachment again, gradually decreasing the thickness of the resulting sheet.

7. Roll out the dough to a thickness of 1.5 mm, periodically dusting it with flour.

8. Pass the ready rolled sheets of dough through a pasta cutting attachment. Thanks to the flour sprinkled on the dough, the noodles won't stick together.

9. If you don't have special attachments, roll out the dough with a rolling pin as thin as possible. To make it easier, always start rolling from one edge in one direction (not back and forth). Don't forget to dust with flour.

10. To make cutting the noodles easier, cut the long strip in half and roll it out slightly. You can cut it either with a regular knife on a wooden cutting board, or use a pizza cutter guided by a ruler.

11. You can start cooking the pasta right away. Generously salt the water (since no salt was added to the dough), and add a tablespoon of sunflower or olive oil. Drop the pasta into the boiling water. Cook for 1.5 to 2 minutes, no longer.

12. Pour a couple of tablespoons of pasta cooking water into the pan with the tomatoes and place the pan over low heat. Transfer the cooked pasta to the pan. Add the herbs and cook for one to two minutes, stirring.

13. Place the pasta on a serving dish and be sure to sprinkle it with Parmesan, or, if necessary, any other grated hard cheese. It turns out absolutely amazing!
