
Homemade Glazed Cheese Cakes
Description
The dish is prepared without unnecessary complications. You can use cottage cheese of any fat content. Choose any mold you like for the cheese. The smaller the mold, the faster the dessert will set and be ready to enjoy. Store it in the refrigerator. It's better not to slice the entire piece at once, but to cut portions from the whole block as needed—this way, the cheese will stay fresh longer. Serve the finished dessert at the table.

1. Pour room temperature water over the gelatin and let it sit to bloom.

2. Blend the cottage cheese in a blender until it becomes creamy and smooth.

3. Beat 4 egg whites into a thick foam. Then add vanilla and gradually incorporate sugar in parts, without turning off the mixer. Beat until the sugar is completely dissolved.

4. Add the mashed cottage cheese to the egg whites in several batches. Mix with a mixer at high speed for at least 5 minutes.

5. Line a rectangular baking pan with parchment paper and pour the custard into it. Spread evenly across the pan and tap the pan lightly to level the mixture. Place the pan in a preheated oven at 180°C and bake for 15 minutes.

6. To prepare the icing, add gelatin to the milk and cook until completely dissolved. Then add sugar, starch, cocoa, and 4 egg yolks, and reduce the heat. Stir the mixture with a whisk until it thickens.

7. When the fondant has thickened and the lumps have dissolved, add a piece of butter and set aside to cool completely.

8. Remove the baked cottage cheese from the mold and let it cool. Wrap the mold with plastic wrap on all sides and pour half of the chocolate fondant into it. Spread evenly.

9. Cut the cottage cheese into 2 parts and transfer to a mold, then pour the remaining fudge on top and smooth it out. Refrigerate for 2 hours.

10. Remove the cheese from the mold, peel off the film, and cut into convenient pieces. Done :)
