
Homemade eclairs
Description
Delicious baked goods for the whole family. So how do you make tasty homemade eclairs at home? It's very simple—just gather the necessary ingredients: wheat flour, eggs, milk, sugar, butter, salt, and vanilla sugar. Want your eclairs to be special? Add cocoa to both the dough and the cream to make chocolate eclairs. Attention! Fill the eclairs with cream only using a special pastry syringe! Happy cooking! Serve with tea or coffee.

In a saucepan, mix 250 ml of water and 100 g of butter, add a pinch of salt. Bring to a boil over medium heat.

Remove the pot from the heat and add 150g of flour, stirring with a wooden spoon until smooth. Return the pot to the heat for a couple of minutes, stirring constantly.

Remove from heat, let cool slightly. Add eggs one at a time, mixing to form a thick dough.

Wet a tablespoon with water and use the wet spoon to place the dough onto the baking sheet. The eclairs should not touch each other.

Bake in a preheated oven at 200 degrees for 35-40 minutes. Do not open the oven during the process.

While the dough is baking, prepare the cream. In a deep bowl, mix 4 egg yolks, a cup of sugar, vanilla sugar, and 50g of flour. Whisk everything with a whisk, then add 100ml of milk and whisk again.

Bring the remaining 400 ml of milk to a boil. Then, slowly pour in the egg mixture in a thin stream, constantly stirring with a spatula. Cook the custard until thickened, about 10 minutes. Remove from heat, cover with plastic wrap, and let cool.

Add 100 g of soft butter to the cooled cream. Beat everything with a mixer until smooth.

Using a pastry syringe, fill the eclairs with cream and sprinkle with powdered sugar on top.
