Plum Wine at Home

Description

The recipe won't take much time. A simple method for making homemade plum wine. Since this wine matures quickly, it cannot be stored in the mini-bar for long. The maximum storage time is 1 week; after that, it will start to sour. It's a perfect excuse to make some young plum wine, invite friends over, and treat them to this wonderful drink. Serve chilled.

    We thoroughly wash the plums and separate them into halves. Remove the pits. Transfer the fruits to a deep container.

    Let's make the syrup. Mix sugar with water. Bring this mixture to a boil over medium heat. Then reduce the heat and cook for another 7-8 minutes. Remove from heat and let the syrup cool.

    Pour the syrup over the plums and let them sit for 30 minutes. Once the plums have released sufficient juice, place the must over medium heat and bring to a boil. Simmer, stirring occasionally, until the plums are soft. Remove from heat, cool, and strain through a sieve. Pour the resulting juice into clean jars, add the starter culture (30 ml per 1 liter of must). Gently mix by shaking the jar. Let it mature in a warm place for 4–5 days.

    After 5 days, strain the young wine once again and bottle it. Chill in the refrigerator—and taste!
