
Homemade wine from black chokeberry
Description
The drink is prepared quickly and easily. You can make the wine from fresh or frozen berries, as well as from juice. Be patient, as the fermentation and aging process takes more than one week. Once the wine has acquired a light color, you can bottle it and store it in a dark place for aging. This wine can be served at festive occasions—it has a pleasant sweetish taste. Serve it chilled.

Pick the berries from the stems and remove leaves and debris, place in a colander and rinse thoroughly.

Transfer the berries to an enameled saucepan and puree using an immersion blender or by hand.

Sprinkle the berries with sugar and mix, leave until the sugar dissolves, and stir well every day (5-10 days).

Once the berries have floated to the surface and the sugar has dissolved, collect the berries and squeeze the juice out of them. Put the juice in the refrigerator, and pour 1 liter of water over the leftover pulp, leaving it for 3 days.

After three days, collect the pomace again and squeeze it thoroughly once more. Combine all the obtained juices with the previously prepared ones, and you can now discard the pomace.

Strain all the liquid through a sieve into a jar, add raisins, and install an airlock.

As soon as you notice that fermentation has ended, siphon the wine off the sediment, bottle it, seal the bottles, and store them in a dark place for several months to mature.
