
Homemade kurabie
Description

Take the butter out of the refrigerator to let it soften. Then place it in a bowl or saucepan. Add sugar and vanilla to the butter. Rub all the ingredients together thoroughly until smooth.

Then sift the flour through a sieve to aerate it. This will make the baked goods crumbly and tender. Add the flour to the saucepan and knead the dough.

Take chilled chicken egg whites and beat them with a mixer at high speed until stiff peaks form. To help the egg whites whip better, you can add a pinch of salt or a few drops of lemon juice. Gently fold the beaten egg whites into the batter.

Transfer the resulting mixture into a piping bag with a pastry tip or into a special pastry syringe. The mixture should be at room temperature, as cold shortcrust pastry is too firm.

Line a baking sheet with parchment paper. Pipe the dough onto it in the shape of flowers. Leave space between the cookies, as the dough will expand during baking. Place a small amount of jam in the center of each cookie. Bake at 180 degrees Celsius for about 40 minutes. Baking time may vary depending on the oven's power.
