To prepare classic dolma, we need to make a meat filling. For this, mince the meat or buy ready-made ground meat. Add finely chopped onion, salt, and spices. Pour in a glass of water and knead until you get a uniform mixture.

For making dolma, I use young white grape leaves frozen in summer. You can also use salted or marinated leaves, but they should be soaked to remove excess salt.

Form a small patty from a small amount of minced meat.

Lift the edges of the leaf and shape it into a dumpling by wrapping the leaf around the filling.

So form all the dumplings this way.

Place several grape leaves on the bottom of a heavy-bottomed pot. Put the dolma on top. Pour in the broth. Bring to the stove and cook for about 40 minutes.

The heat should be low. Dolma should simmer very gently. This process is more like stewing. As it simmers, the broth may evaporate. Add a little water if necessary. At the end of cooking, add a couple of tablespoons of sour cream to the broth. Finish cooking, then turn off the heat.

Serve the dolma. You can add sour cream or a sour cream sauce made by mixing sour cream with spices and garlic.
