
Doctor's Crispbreads
Description
Homemade pastries for tea. These pastries will take time, as the starter ferments for at least 4 hours. After kneading the dough, another 1.5 hours are needed, and of course, proofing the products as well. Having gone through such a long process, the pastries will turn out soft, with a thin crust. I hope you will like them. You can serve them with tea or coffee.

Prepare the necessary ingredients.

Combine in a large bowl 160 ml of warm water, 2 grams of yeast, and 250 grams of flour.

Knead a dense but soft dough. This will be the starter. Cover the bowl tightly with plastic wrap and leave it at room temperature for 4 hours.

After the specified time, the starter will increase in volume, and as soon as it begins to sink, that is the signal that it is ready.

Gather the starter toward the center of the bowl. Add 18 ml of warm water, 2 grams of yeast, sugar, salt, and soft butter. Mix everything well.

Add 250 grams of flour and bran.

Start mixing with a spoon. As soon as the dough begins to come together into lumps, knead it by hand.

Knead the finished dough well. It should become uniform, slightly rough (due to the presence of bran), and soft. Shape it into a ball and place it in a bowl greased with vegetable oil. Cover with plastic wrap and put it in a warm place for 1.5 hours.

After the specified time, the dough will increase in volume several times. It is ready for shaping.

Divide the dough into 9 parts. The weight of one piece is 110 grams. Shape it into an oblong or round form. Place on a baking sheet lined with parchment paper. Cover with a towel and leave for 40 minutes at room temperature.

Preheat the oven to 230 degrees, and place a bowl of water on the bottom of the oven. Make cuts on the rolls. Put them in the oven for 10 minutes. Then reduce the temperature to 200 degrees, remove the bowl of water, and bake for another 10–15 minutes. Take into account the specifics of your oven.

After the allotted time, remove the crispbreads from the oven. They will not have a pronounced golden color, but to the touch they should be very light.
