
Giz-biz
Description
The most delicious jiz-biz is, of course, made from young lamb. Unfortunately, people living in big and small cities rarely have access to fresh offal. Most often, we have to buy frozen products. Therefore, we'll prepare jiz-biz with adjustments for urban reality.

Prepare the necessary ingredients.

Rinse the lungs and boil until tender. Rinse all the offal thoroughly, dry well, and cut into large pieces.

Slice the onion into thin strips.

Heat the oil in a cauldron. If available, add tail fat and render out the cracklings. Then remove the cracklings with a slotted spoon. Add pieces of kidneys and heart to the oil. Fry, stirring, until lightly browned. Add the lungs and let them brown slightly.

Place the onion in the pan and let it brown slightly. Add the potato in not-too-thick slices. Fry, stirring occasionally, until the potatoes develop a light crust.

Spread out the ingredients and place a garlic head, cut in half crosswise, at the bottom of the cauldron. Let it brown. Add fresh rosemary sprigs and fry for another couple of minutes.

Place the liver in the pan and fry until it sears. Then generously season with salt and pepper. Cook a little longer, stirring constantly, so that the liver remains pink inside.

Serve "Jiz-biz" hot, with fresh herbs, fresh flatbreads, tomatoes, and hot pepper. Red wine pairs perfectly with the dish.
