
Rhubarb Jam
Description
Winter food preservation at home. It's rhubarb season — spring! Juicy, green, and healthy rhubarb works not only for ordinary compote, but also for a tasty, healthy jam you can treat friends who drop in for tea or the kids with. This original jam is easy to make from simple, everyday ingredients. Rhubarb jam is very popular in the USA, yet for some reason we rarely make it here. And that's a shame — it's a very tasty jam; I recommend giving it a try. Enjoy

Step 1

1. Place washed, cubed rhubarb in a medium baking dish. Add vanilla and a pinch of salt, and let stand for 10 minutes.

2. Next, squeeze lemon juice over the rhubarb, mix everything together, and place in an oven preheated to 350°F. Bake for 25–30 minutes.

3. Remove the rhubarb from the oven and let cool.

4. Run the ginger through a garlic press, strain the juice through cheesecloth, and add it to the rhubarb. Rub everything together until no large pieces of rhubarb remain.

5. Blend the ingredients with a blender.

6. Spoon the jam into a jar.
