
Tomato Jam
Description
A homemade winter preserve. I like to spread tomato jam on white bread. You can garnish such a sandwich with a basil leaf. This appetizer can go with dinner. It will brighten an afternoon snack too. Moreover, an exquisite tomato jam, vivid in color and flavor, will help you handle unexpected guests. Jars keep for up to a year in a cool place.

1. Wash the tomatoes, cut into quarters, and remove the cores.

2. Squeeze the juice from the lemons. You can do this without clever gadgets—just using brute physical force :)

3. Mix all the jam ingredients in a large pot. I.e. combine the tomatoes, lemon juice, thyme, balsamic or wine vinegar, cinnamon, salt, and pepper. Then add the syrup. Maple syrup is ideal if you have it. But it’s easy to substitute—just boil water with sugar. For half a cup of water, use 3–4 tablespoons of sugar.

4. Cook the tomato jam over medium heat for one hour. Stir occasionally.

5. After one hour, remove the thyme sprigs from the jam.

6. Pour the hot ready tomato jam into sterilized jars.

7. Sterilize the jars of jam and seal them. Store in a dark, cool place. Serve the tomato jam with bread, white loaf, or crackers.
