
Giardiniera
Description
A delicious appetizer for any gathering. Giardiniera is an Italian vegetable mix pickled in vinegar or oil. This mix is typically served as an appetizer or salad. In the US, giardiniera is used as a condiment in beef sandwiches. The Italian version of giardiniera includes onion, celery, zucchini, carrot, and cauliflower. The vegetables are marinated in red or white wine vinegar. American giardiniera is usually made with Serrano peppers along with a combination of assorted vegetables, including bell pepper, celery, olives, carrot, and cauliflower. The vegetables are marinated in vegetable, olive, or soybean oil, or a mix of all three oils. American giardiniera with vinegar is also often seen. This recipe yields 2 half-liter jars of giardiniera. It can be served warm or chilled.

1. Cut the cauliflower, bell pepper, carrots, and onion. Finely chop the Serrano pepper. Cut the garlic cloves in half. Mix apple cider vinegar, water, sugar, salt, and black peppercorns in a medium saucepan. Bring to a boil, reduce the heat, and simmer for 3 minutes.

2. Place the chopped cauliflower, sweet pepper, onion, and carrots in a large bowl.

3. Mix and divide the mixture between two glass jars.

4. On top, sprinkle the mixture in each jar with half of the dried herbs, Serrano pepper, and garlic.

5. Carefully pour the vinegar mixture into each jar. Cover with a lid and shake gently to mix evenly.

6. Remove the lids and let cool for about 15 minutes. When the mixture has cooled, seal the jars tightly and place in the refrigerator at minimum. The mixture should be gently shaken a couple of times a day. Giardiniera will keep in the refrigerator for up to 1 month.
