
Duxelles
Description
Universal dressing for salads and hot dishes. Duxelle is used in the preparation of many dishes. It's an excellent seasoning, sauce, filling, or base. You can add cream, milk, tomato paste, or wine to duxelle, creating various sauces. Add vegetable oil to taste and based on availability. Traditionally, olive oil is used in French cuisine, but considering our specifics, sunflower oil works perfectly well. Serve the sauce with meat or fish, or use it as a salad dressing.

Prepare the ingredients for making duxelles.

Clean and wash the mushrooms.

Cut the mushrooms into random pieces.

Grind the mushrooms in a blender or food processor.

Peel the onion, wash it and chop finely. Place in a frying pan.

Finely chop the garlic clove and add it to the onion in the frying pan.

Add the butter and vegetable oil.

Sauté the onion and garlic in oil until translucent.

Add the chopped mushrooms to the onion and garlic.

Salt, pepper, and simmer the onions, garlic, and mushrooms until all the liquid has evaporated.

The duxelles is ready. Transfer it to a bowl, cover with plastic wrap, and store in the refrigerator.
