Dijon mustard

240 min4 serv.20 февр. 2026 г.

Description

Perfectly complements meat, poultry, and side dishes. Before choosing mustard seeds, keep in mind that the darker the seeds, the spicier the mustard. Dijon mustard typically uses a blend of seeds in various shades. However, if you prefer a milder mustard, use lighter-colored seeds. Mustard should be left to steep before use to develop its aroma. If left to stand for 24 hours, it will become a delicious, aromatic addition to your favorite dishes. Serve chilled or at room temperature.

First, soak the mustard seeds in clean water so they swell and become soft. Cover them with cold water and leave for two hours. Stir the seeds occasionally.

While the grains are swelling, prepare the dressing. Mix sugar, honey (preferably liquid), turmeric, vinegar, and a tablespoon of water. Rub everything thoroughly and set aside to let the sugar and honey dissolve. Let the dressing steep for at least an hour.

To give the mustard a spicy aroma, you can add spices such as anise and cinnamon. Grind them into a powder using a mortar. You'll need just a single pinch.

Now mix all the prepared ingredients. If there is any water left in the container with the mustard seeds, drain it. Then add the dressing and aromatic spices. Mix everything well and let the mustard steep for at least 2 hours, so the flavors of all the ingredients can fully develop.
