Instructions
- 1
Step 1

1. First, wash and dry the apples. Remove the cores, but leave the skin on. Bake them in the oven or microwave until soft.
- 2
Step 2

2. Meanwhile, soak agar-agar in 160 ml of water. Carefully remove the pulp from the prepared apples with a teaspoon and place it into the blender jar.
- 3
Step 3

3. Blend the apples into a smooth, lump-free puree. Add 200 g of sugar (or substitute) and vanilla. Mix thoroughly until uniform and let it sit for an hour.
- 4
Step 4

4. Place agar-agar over heat and warm it. Add about 400 grams of sugar (or substitute to taste) and bring to a boil.
- 5
Step 5

5. Boil the syrup for 5 minutes over medium heat, then let it cool slightly.
- 6
Step 6

6. Add the egg white to the cooled apple mixture and beat.
- 7
Step 7

7. Gradually pour the hot (but not boiling) syrup into the egg whites, continuing to beat constantly. The homemade diet meringue will be tender if the mixture is well beaten and sufficiently airy.
- 8
Step 8

8. The process can only be stopped once the mixture has increased sufficiently in volume.
- 9
Step 9

9. Prepare a large baking sheet and pipe the meringue using a piping tip. Leave it to dry for approximately 12–14 hours. If desired, you can later glue the halves together before serving. That's the whole simple recipe for diet meringue, which is definitely worth trying.
