
Dietary Cottage Cheese Cake
Description
The recipe won't take much time. The key to a delicious cottage cheese cake is choosing fresh, non-sour cottage cheese. Then the natural sweetness of the berry puree will be sufficient. You can easily make the berry puree yourself from fresh or frozen berries—just blend them until smooth. Divide the cottage cheese mixture and gelatin solution into roughly equal parts: two large portions and a little bit reserved for the top layer. The rest is up to your imagination. Serve warm or chilled. Perfect with tea.

Prepare the ingredients.

Dissolve the gelatin according to the package instructions, using 150 ml of water. Some types need to be soaked beforehand, but it's most convenient to use fast-dissolving gelatin.

Divide the cottage cheese into three parts—one small and two roughly equal. Add the blueberry purée to the first part. Blend with an immersion blender until smooth. While continuing to blend, gradually pour in the prepared gelatin solution—slightly less than half.

Pour the blueberry layer into a springform pan and place in the freezer for a few minutes to set.

To the second part of the cottage cheese, add strawberry purée and the gelatin solution—set aside just one teaspoon of the gelatin for the third layer. Blend with an immersion blender until smooth.

Place the strawberry layer on top of the blueberry layer. It will slightly sink into the unset layer, creating a beautiful effect when the cake is sliced. Freeze for 10 minutes.

Mix the remaining plain cottage cheese with the gelatin and process with an immersion blender. Cover the cake with a thin layer of the white cottage cheese mixture and refrigerate for at least 3 hours.

Remove the set cake from the sides, transfer it to a serving plate, and decorate to taste. Remember, this is a diet cake! Bitter chocolate and fresh berries will be perfect!
