Description
It's very important not to overcook turkey kebabs (especially turkey breast), otherwise they will become too dry and tough. Marinating the meat is also a crucial step. If you have time, let the meat marinate for as long as possible.

First, prepare the marinade. To do this, mix kefir, crushed peppers, and dried basil in a sufficiently deep container.

Place the turkey, cut into pieces suitable for skewers, into the marinade, mix well, and let it marinate for 3 hours.

After marinating, add salt and thread the meat onto skewers. Try to space the pieces evenly—don't pack them tightly together (as the meat layer will cook unevenly), but avoid leaving them too far apart either, as this risks drying out the shashlik.

Shashlik can take varying amounts of time to cook over hot coals, as too many factors affect the cooking speed. Usually, this process takes no less than 30–40 minutes.
