
Dietary Chicken Pilaf
Description
Pilaf is a very popular dish in Eastern cuisine. It is cooked quite often not only in the East but also in Russia. Today I prepared it with lean chicken meat, a small amount of fat and spices. Nevertheless, the dish turns out to be just as tasty, filling, and fluffy. Everything is very simple, and you will see it for yourself by following the step-by-step instructions in the recipe.

Wash any meaty parts of chicken and place them in a heavy-bottomed pot.

Pour a little sunflower oil and simmer the chicken until cooked.

Remove the skin and bones from the cooked chicken. Leave only the meat.

Peel and wash the onion and carrot, then slice them. Cut the onion into half-rings and the carrot into strips. Add them to the pot with the meat. Pour in a little more oil and simmer the chicken with the vegetables for 10–15 minutes, stirring occasionally.

Rinse the rice thoroughly in several changes of water. Pour hot water over it and let it sit for 40–50 minutes. Add a little salt to the rice.

Season the chicken with carrots and onions with salt, add turmeric and cumin. Place the rice on top. Pour hot water into the pot so that it is one finger above the rice. Do not cover the pot with a lid.

Cook the pilaf over medium heat until the liquid on top has evaporated, but some still remains at the bottom. Then gather the rice into a mound, moving from the edges toward the center of the pot. Using a wooden stick or spoon, make holes down to the bottom of the pot. Cover with a lid and continue cooking the pilaf for another 20–25 minutes over the lowest possible heat.
